Broccoli & black eyed beans salad-
(Sufficient for 2 people)

1 cups black eyed beans – boiled in lightly salted water;
2 cups broccoli flowerets – finely chopped;
2 tea spoons cilantro – finely chopped;
1 tea spoon lemon juice;
4 tea spoons dates – chopped
4 tea spoons walnuts – chopped
salt to taste,
a pinch of black pepper powder
Toss together all the above ingredients in a bowl and keep for 10 minutes for juices to mix well.
Some people find broccoli a little heavy to digest. They can lightly steam it and then mix.
You can use kidney beans instead of black eyed beans.
